Cooking can be intimidating, especially with so many ingredients. Chef Matt Grunwald gave us 3 great recipes that only require 2 ingredients each.
GREEK YOGURT & FLOUR
In a bowl, combine one cup of self rising flour and one cup of Greek or natural yogurt, and bring them together to form a ball. Turn it out on to a floured board to knead and roll. Knead for 5-8 minutes. Roll into a pizza shape and add toppings. Bake about 10-15 minutes at 400 or 450.
ONION SOUP AND RAW ALMONDS
Soak one cup of almonds in water overnight. The soaked almonds will create a creamy puree in a blender or food processor, and you can find healthy, organic versions of onion soup mix. Let it settle in the fridge to complete your delicious treat.
FLOURLESS NUTELLA CAKE
NUTELLA AND EGGS
4 large or extra large eggs and 8 1/2 ounces of Nutella
1. Grease a 6 or 7 inch round springform pan. Then line it with parchment paper on the sides and on the bottom. Preheat the oven to 350. Beat eggs on the highest speed with a stand mixer until about it's triple in volume (about 6 minutes). The egg consistency is the key to making this recipe work, so don't try to save time on this step.
2. Measure out Nutella into a glass bowl. Microwave Nutella for about 20 seconds to make it softer. Add in 1/3 of the egg mixture. Gently stir with a spatula in the same clockwise direction until all of the egg is mixed in and no streaks remain. Then add another 1/3 of egg mixture and fold again until no egg streaks remain. Pour in the remaining 1/3 and make sure to scrape the foam that sticks to the mixing bowl into the batter and stir until no streaks remain. Make sure to do this in 3 batches because otherwise the whipped eggs may lose too much of the air that has been whipped into them if you try to do it all at once.
3. Pour batter into springfoam pan. Bake for 20-25 minutes until knife inserted comes out clean. Let cake cool completely before removing from pan and cutting and serving.
