Nothing says summer like a barbecue, but for the cook on the grill, it can be an inferno! So if you can’t take the heat – and want a break from meat! – grab an electric grill and get in the kitchen. We met with Chef Teresa Hansen who showed us three alternate things to grill, along with alternate ways to grill them.
1. Southwestern Grilled Stuffed Avocado
Who doesn’t love avocados? If you haven’t tried them grilled yet, then you’re missing out! This recipe is your perfect barbecue companion, and definitely worth serving at your next gathering.
2 avocados, cut in half, peeled and pitted
1 lime, cut in half
1 cup pico de gallo (or salsa)
1/4 cup crumbled feta cheese
Salt and pepper, to taste
Squeeze lime juice over avocado halves to prevent from browning. Brush with avocado oil.
Preheat grill to 450F. Once grill is hot, place avocado, flesh side down. Grill for 4-5 minutes until grill marks form and slightly charred.
Remove from grill and stuff the center of each avocado half with prepared pico de gallo. Top with feta cheese and season with salt and pepper. Serve immediately.
Pro tip: Adding a little lime juice keeps avocados from browning before they hit the grill.
2. Chili Orange Scallop Skewers
We’re turning up the heat with this next recipe and going with sea food. Adding shrimp and scallops to your grilling selections is perfect for people who aren’t fans of beef or pork. Not to mention it will give you a taste of the beach without leaving home!
8 large scallops, about one pound
8 par-boiled shrimp, peeled and deveined
16 wooden skewers
Salt and pepper to taste
Chili Orange Sauce Ingredients
Juice of ½ orange (about ¼ cup)
½ teaspoon chill garlic sauce
1 teaspoon honey
Skewer scallops between two skewers, alternating with shrimp. We recommend doing two shrimp and two scallops per set of skewers.
Brush on or drizzle avocado oil on scallops and shrimp. Season with salt and pepper to taste.
Heat grill to 450F. Additionally, oil grill with avocado oil to prevent sticking. Once grill is hot, add skewers and cook on each side for 3-4 minutes, covered.
In the last minute of cooking, brush on half of chili orange sauce.
Remove from grill and serve over fresh mixed greens, pre-bought deli corn salad, or whatever side dish of your choice. Brush additional chili orange sauce over skewers and serve.
Pro tip: soak wooden skewers for a few hours or overnight to prevent from scorching.
3. Grilled Fruit Salad
And if you’re looking for the perfect, most refreshing taste of summer, then this fruit salad is just for you. It’s a wonderful way to skip the meat, but still get the added burst of flavor from the grill. When you grill fruit, what you’re doing is basically caramelizing the fruit’s natural sugar, which will make the fruit extra sweet and delicious.
4 large pieces of pineapple
4 large pieces of watermelon
2 peaches, cut in half and pit removed
1/4 cup mascarpone cheese
Drizzle of honey
Zest of one lime
4-5 basil leaves, finely sliced
Lightly oil each piece of fruit.
Preheat grill to 450 F. Once grill is hot, add fruit and grill on each side for 3-4 minutes, covering grill.
Remove from grill and allow to cool. Then cut fruit into smaller pieces.
Serve with mascarpone cheese and a drizzle of honey. Zest fresh lime over fruit and garnish with fresh basil.
