Call it an obsession or a fad, but kale is popping up everywhere and in everything. Chefs, like Michael Stebner from True Food Kitchen, dish it out everyday from pizza, to salads, to kaleaid and even kale chips.
He gave us a list of facts why it's his favorite vegetable:
1) It's a figure-watching food: Kale is actually one of the lowest calorie and lowest carbohydrate foods. That's what makes it so powerful.
2) High in fiber and full of Vitamins A and C: It's super high in vito nutrients and this salad has as much calcium as a glass of milk.
3) Vitamin rich but dirt cheap. Kale comes from the cabbage family so lots of different kinds exist.
