3 extreme salsas that will heat up your next party

The last thing you want to do at your next party is serve a generic jar of salsa. Kristina Guerrero met up with chef Chris Brugman of Hearth '61 at Mountain Shadows, to get some unique ideas that are sure to heat up your next gathering.

1.  Wood Roasted Corn Salsa

Mix the Following Ingredients:

  • black beans
  • charred avocado
  • heirloom cherry tomato
  • pickled spring onions
  • toasted cumin & chili
  • jalapeno
  • roasted poblano
  • red onion
  • cilantro
  • flowers

2. Strawberry Fields Salsa

Mix the Following Ingredients:

  • Macerated and fresh strawberries
  • Green strawberry
  • English peas
  • Purple heirloom tomatillos
  • Dragon Fruit Salsa
  • Cucumber
  • Spring onion
  • Pickled green almonds
  • Lemon oil
  • Micro mint

3.  Dragon Fire Salsa

Mix the Following Ingredients:

  • Fresno chilies
  • Pasillas
  • Jalapeno
  • Calabrian chili
  • Dragons tail radish
  • Heirloom tomato
  • Pickled red onion
  • Lime
  • Cilantro
  • Charred tropical fruit
  • Charred Zululand mini pineapple
  • Saffire grapes
  • Passion fruit
  • Pomegranate
  • Jimmy nardello peppers
  • Yellow pear tomato
  • Jalapeno
  • Fresno peppers
  • Tangerine oil
  • Basil
  • Pineapple Mint

Dragon Fire Salsa

poblano, purple tomatillo, fresno, heirloom tomato, pasilla, jalapeno, dragon tail radish, red onion, cilantro, Szechuan buttons 

Food Pairings

Forty Rod 

The strong flavors of the Campfire whiskey and the ginger should hold up to the spice of the salsa and the creaminess of the corn milk should provide mild relief from the spice.

Charred tropical fruit salsa

charred pineapple, sapphire grapes, passionfruit, pomegranate, yellow pear tomatoes, jimmy nardello peppers, mint, 


Root of all Evil

The smoke from the mezcal will be nice with the charred pineapple, the earthiness of the mezcal and beets will be a nice counterpoint to the fruity notes, and the baking spice notes from the chai syrup will be nice with everything in that!

Corn, black bean, charred avocado, pickled spring onions, cilantro, radish, heirloom tomato


Four Peaks Kiltlifter

This was probably the toughest pairing since it has so much umami.  I thought the malty notes and slight sweetness of the kiltlifter would be nice with the roasted corn, beans, and avocado.  The acid in the pickles will brighten up the beer as well. 

Strawberry fields Salsa

Strawberry, peas, mint, cucumber, fresnos, pickled green almonds, pea flowers, oils


Beiler Rose, Provenance, FR 

Just dump the salsa in the rose and make it a Sangria!
