Most people think of ramen noodles as desperation college food, but nowadays, it's sporting some serious foodie swagger. Brian Corsetti hit up the Yatai Ramen AZ Food Truck, to get three dazzling noodle meals that are overhauling the ramen stereotype.
1. Breakfast Bonanza
The first step is to boil the water, then throw in the noodles, but only cook the ramen for 3 minutes. While that's cooking, heat a pan then bring on the peppers, egg, and bacon. Top it off with parsley and hot sauce.
2. Everybody Loves Ramon
This one is a roman salad. Use cold ramen, mixed greens, cucumbers, sliced chicken, half a boiled egg, and pickled red ginger.
Cook and mix together the ramen, chicken, veggies, soy, and pickled ginger. So simple and absolutely delicious!
