- 3 eggs, scrambled
- 1 tortilla, large
- 1/4 cup cheese
- Green, red peppers
- Hot sauce (optional)

2. Spam & Cheese Melt
Ingredients:
- 1 can of Spam, chopped
- 1/2 cup Mayo
- Sliced cheese
- Salt/Pepper to taste
- Bread, toasted
In a bowl, mix chopped spam, celery, and mayo. Add the mix to one slice of bread, open face style. Then melt a slice of cheese on top before adding the second slice of bread. Lunch made easy!
3. Spam Wellington
Ingredients:
2 sheets of puff pastry
1 can of Spam, uncut
1 cup minced mushrooms
1 cup chopped onions
1 egg wash
Butter
Thyme
Salt/Pepper to taste
Pre-heat your oven to 425 degrees. Sautee mushrooms and onions with butter until onions are soft and browning, then set aside.
Once at room temperature, spread the mixture around the pastry sheet. Add the spam block to the center of the sheet. Wrap everything together, securing the edges with the egg wash.
Wrap the second puff pastry sheet around the first to prevent leakage, cover with egg wash, sprinkle with thyme. Cook for about 45 minutes or until golden brown.
