Chef Silvana Salcido Esparza is the culinary genius and owner behind Barrio Café in Phoenix, Arizona. She’s been wowing patrons with her take on Mexican cuisine since 2002. “My mantra in the kitchen is to cook with love. If you don’t have love, you’re not cooking,” she says. And food isn’t the only thing impressing customers. The outside of the restaurant is decked out with eye-catching graffiti murals created by local artists.
Chef Esparza has been nominated for multiple James Beard Awards – the nation’s most coveted culinary award.
2. Mesa Grill in Las Vegas, Nevada
Celebrity Chef and Food Network Star Bobby Flay opened this eatery in 2004. Popular dishes include Chipotle-glazed rib-eye, and spice-rubbed pork tenderloin with bourbon Ancho-chili sauce. Chef Flay says he’s inspired by the culture of the American Southwest. “I love chili peppers, both fresh and dried,” he explains. “The blue corn, the yellow corn, the white corn – it’s sort of what makes up the energy of the restaurant, and also for myself.”
3. El Chingon Mexican Bistro in Denver, Colorado
Executive Chef David Lopez cooks alongside his grandmother at the family-owned restaurant that opened in 2011. While the recipes may be old, they’re served with a modern twist. Plus, all the pork is locally butchered, grass-fed and hormone-free. “It’s all about food and culture,” says Lopez. “And our love is on the table with the food.” Love is our favorite ingredient!
