Cornbread Recipes: 4 Easy & Delicious Cornbread Variations to Try at HomeFood
Move over, plain ol’ cornbread! We met with chef Daniel Santos at Z’Tejas who showed us four cornbread recipes that put a fresh twist on this classic comfort food.
1. Classic Cornbread
Let’s start off with a classic, traditional cornbread. This version serves as the foundation for the rest of our tasty cornbread recipes.
1 ½ cups yellow cornmeal
1 ½ cups all-purpose flour
1/3 cup + 1 tablespoon sugar
1 tablespoon baking soda
1 tablespoon baking powder
¼ teaspoon salt
1/3 cup + 1 tablespoon creamed corn
1/3 cup + 1 tablespoon corn kernels
1 ½ cups buttermilk
3 each eggs
1/3 cup + 1 tablespoon unsalted butter, melted
1 cup plain yogurt
Pre-heat the oven to 350 F.
Arrange 4 skillets on a large cookie sheet and place in the oven to heat to 350F.
In a large mixing bowl, combine dry ingredients. Mix well to evenly distribute ingredients.
In a separate mixing bowl, combine wet ingredients. Mix well with a wire whisk until completely combined.
Add the dry ingredients to the wet ingredients and stir well with a wire whisk to ensure that all ingredients are well incorporated.
Remove the pre-heated skillets from the oven and spray them well with non-stick spray.
Divide the batter evenly between the skillets.
Return to the oven and bake for 8 minutes.
Rotate the pan 180 degrees and bake for an additional 8 minutes.
Check for doneness by inserting a toothpick in the center. A very small amount of batter should stick to the cornbread.
Allow to sit for 5 minutes before cutting.
Cut and enjoy with honey butter.
2. Caramelized Onion & Jack Cheese
Now we’ll show you how to make caramelized onions and gooey jack cheese cornbread! This is one of those cornbread recipes that’ll have your dinner guests begging for more!
30 ounces yellow onion, ¼” dice
4 tablespoons butter, unsalted
1 pound jack cheese, shredded
1/8 teaspoon salt
1/8 teaspoon black pepper
Melt the butter in large skillet over medium heat.
Place the diced onions in the skillet and stir to coat with the butter.
Season with the salt and pepper.
Allow to cook, stirring occasionally until the onions are softened and slightly browned.
Allow to cool for 5 minutes then add to the batter.
Add the jack cheese. Stir well to combine.
Proceed with step 6 in the classic recipe.
Serve with roasted garlic and bacon butter.
3. Green Chile Pork

1 pound pork verde, drained and shredded
4 cups pork verde
Place the drained and shredded pork in the batter and stir to combine.
Continue with step 6 in the original recipe.
Serve with 1 cup of warmed pork verde.
4. Cornbread Recipes: Cranberry Orange
Our last of savory corn bread recipes is tart, tangy and sweet orange and cranberry cornbread!
1 pound cranberries, chopped
2 each oranges, zested
4 tablespoons honey, divided
Place the chopped cranberries, orange zest and half of the honey in the batter and stir to combine well.
Continue with step 6 from the original recipe.
When the cornbread comes out of the oven and is still hot, brush with the remaining honey.
Enjoy with honey cardamom butter.
