We met with David Duarte – Executive Chef at The Social on 83rd – who concocted this deliciously innovative gazpacho recipe with cantaloupe and more yummylicious ingredients.

What is Gazpacho?

First – if you’re wondering what gazpacho exactly is, Chef David has a simple explanation. “A gazpacho is just a rough name for a cold soup,” he informs. “You can do it out of a lot of different things, but it is a chilled soup.” Who doesn’t live for a good soup?!

Grilling Your Gazpacho

You might also be wondering, can you really grill your way to a gazpacho? The answer is yes, and David tells us why: “Grilling changes the flavor, gives a little bit of a char, and adds a uniqueness to the flavor of the dish that you’re gonna put it in.” In other words, grilling your ingredients will take this dish to a whole ‘nother level!

Grilled Cantaloupe Gazpacho Recipe

In this gazpacho recipe, cantaloupe is the star ingredient. “What’s great about using cantaloupes and different kinds of fruits is it’s got sugar naturally in it,” says chef David. “So when we get these beautiful grill marks, it caramelizes it and actually changes the flavor of the actual fruit.” But he also has another charred surprise – cucumber! 1 medium cantaloupe (peeled, seeded, chopped)

1 small cucumber (peeled, chopped)

2 tablespoons chopped red onions

2 tablespoons kosher salt

1/3 cup water

½ cup extra virgin olive oil

Salt and pepper to taste

Fresh mint garnish

Grill cantaloupe and cucumber until they get char marks.

In a blender, combine chopped cantaloupe and cucumber with red onion, salt, and water and blend until smooth.

With the motor running, drizzle in olive oil and a pinch of salt and pepper.

Serve cold and garnish with fresh mint.
