If you love cooking with instant pots, slow cookers, or crockpots, you’ll love these recipes! And if you think instant pots are just for stews, think again. We have three easy and tasty instant pot recipes that'll simplify your day.
1. Blueberry Cornmeal Breakfast Cake
First up is Blueberry Cornmeal Breakfast Cake. Begin by mixing all the ingredients in a bowl, then pour into a greased baking pan. Place it into the instant pot, close the lid, press the "manual" button, and set it for 35 minutes. Once done, vent for 5 minutes.
1 8.5oz box Jiffy cornbread mix
2 tablespoons ground flax seed
2 tablespoons chia seeds
½ cup milk
1 cup blueberries
2 tablespoons honey
Place trivet inside instant pot, then add 1 cup of water to inner pot.
Grease a circular baking dish that will fit inside your instant pot and set aside. You can use a springform pan if you like.
In a medium sized mixing bowl, whisk together cornbread mix, flax, chia, egg, and milk, then gently stir in blueberries.
Pour batter into prepared baking dish then carefully lower onto trivet.
Lock lid and set to high pressure for 35 minutes.
When time is up, let pressure naturally release for 5 minutes, then do a quick release for all remaining pressure.
Drizzle with honey, slice into wedges, and serve!
2. Pork Loin Verde with Rice
Next up is Pork Loin Verde with Rice. With less than 5 minutes of prep, you'll load the pork, rice, onion broth, salt, and salsa into the instant pot – then set it at high pressure for 18 minutes.
⅔ cup chicken broth
1¼ cup long grain brown rice
1 small yellow onion, sliced
1½ lb. Jennie-O turkey tenderloins
½ c. salsa verde
½ tsp. salt
Add the chicken broth and rice to your 5 or 6-quart instant pot. Top with the sliced onions, turkey, and salsa verde. Sprinkle with salt and close the lid.
Close the vent to "pressure cooker" mode, and set on high for 18 minutes.
When the timer beeps, and the cooking is complete, do not open the lid. Let the pot sit for 8 additional minutes.
After 8 minutes, turn off the instant pot, open the lid, and the turkey and rice is ready to serve.
Optional: garnish with fresh cilantro.
3. Rice Pudding
Our third simple instant pot recipe is Rice Pudding. Start by combining the rice, water, and salt in the instant pot. Close the lid and select high pressure for three minutes. When it beeps, turn the cooker off and vent for 10 minutes. Then mix milk, sugar, and eggs in a bowl and pour into the pot. Select sauté and cook until the mixture boils. Turn off the pot and add raisins. Scoop it into serving dishes, and top off with whipped cream and cinnamon.
1 cup Arborio rice
1 1/2 cups water
1/4 teaspoon salt
2 cups whole milk, divided
1/2 cup sugar
1/2 teaspoon vanilla extract
3/4 cup raisins
In instant pot, combine rice, water, and salt.
Lock the lid in place and select high pressure, and 3 minutes cook time.
When beep sounds, turn off pressure cooker and use a natural pressure release for 10 minutes.
After 10 minutes, release any remaining pressure with a quick pressure release.
Add 1 1/2 cups milk and sugar to rice in pressure cooking pot; stir to combine.
In a small mixing bowl, whisk eggs with remaining 1/2 cup milk and vanilla.
Pour through a fine mesh strainer into instant pot. Select sauté and cook, stirring constantly, until mixture starts to boil.
Turn off instant pot. Remove pot from the pressure cooker.
Stir in raisins. Pudding will thicken as it cools.
Serve warm or pour into serving dishes and chill.
Served topped with whipped cream, and a sprinkle of cinnamon or nutmeg, if desired.
