Pineapple Recipes: Try This Piña Mezcalito & Pineapple Salsa

June 27th is National Pineapple Day, and the funny-looking fruit is in the middle of a pop culture takeover.We’re showing you three ways the pineapple trend is taking over. 

1. Pineapple Food and Drinks 

Julian Wright, Owner of Las Palmas Cantina, says your traditional Piña Colada is out this summer getting replaced with a mouthwatering Piña Mezcalito. Want to try it? Here’s the recipe from Bartender Jeneva Leal. It’s the perfect combination of smoky and sweet!

Piña Mezcalito



  • 2 oz Rayu Mezcal 
  • 3 oz roasted pineapple 
  • 2 oz coconut water 
  • .5 oz agave nectar 


Prepare pineapple by skinning and cutting it into large chunks. Roast on high heat under a broiler until the pineapple starts to blacken. Put the roasted pineapple in a blender with pineapple juice – there should be a 50/50 mix of pineapple to juice. Pureé. Add roasted pineapple pureé to a shaker with mezcal, coconut water and agave nectar. Shake and strain into glass. Add ice to fill. 

Garnish with a fresh pineapple wedge, cherry and pineapple leaf. 

Grilled Pineapple Salsa


Throwing a good old barbecue this weekend, and want to step out of your comfort zone? We have you covered! This Grilled Pineapple Salsa will leave your guests impressed and make you the star of the kitchen. 


  • 1 pineapple 
  • 2 medium shallots  
  • 4 garlic cloves 
  • ½ grapefruit 
  • 1 jalapeño, diced and seeded 
  • 2 Habanero peppers, seeded 


Clean and slice pineapple into rounds. On a wood-fired grill, grill the pineapple slices, garlic and shallots. Dice three slices of the grilled pineapple and reserve.  

In a blender, add remaining pineapple, roasted shallots, garlic and seeded Habaneros. Juice the grapefruit and add half, season with salt and mix. If the sauce is too thick, add a few teaspoons of water until you reach the desired consistency. 

Combine pureé with diced jalapeños and pineapple. Season with extra salt and fresh cilantro.  


2. Pineapple Clothing 

You know pineapples are trending when they’re on your clothes! Pineapple clothing is all the craze right now, whether it’s skirts, shirts, earring and even pineapple glasses. But fellas, don’t feel left out. There are plenty of pineapple shorts and shirts for you and even kids to wear.  

3. Home Décor 

Spongebob may have been on to something by turning a pineapple into his home. According to design expert and art consultant Julie Muñiz, pineapples have a positive meaning: they’re a symbol of hospitality! You can find pineapple prints on tons of different home accent pieces, including throw pillows, lamps, and shower curtains.  


Whether it’s a pair of adorable sunglasses, a skirt or a recipe, pineapple is the tropical fruit that’s making a statement right now and it’s here to stay.
