Microwaveable Meals: 3 Quick Recipes You Can Make in Minutes

Microwaveable meals — who would’ve thought of using a microwave to prepare dinner? This appliance is ready to do more than just reheat coffee and thaw frozen stuff. The List brings you three recipes you’ll want to make over and over again.  

1. Personal Pizza 

This personal pizza is easy as pie! See what we did there? No need to head out to buy one, just make your own.


  • 1 12″ Boboli pizza dough
  • 1 package of pepperoni
  • 1 can sliced black olives
  • 1 package of shredded mozzarella
  • 1 can/jar of pizza sauce
  • Garlic salt, if desired


Spread thin layer of sauce over the pizza dough, leaving room for crust. Sprinkle shredded cheese over the sauce evenly. Place pepperoni around the pizza. Evenly distribute olives and sprinkle with garlic salt. Microwave on high for about five minutes. Check cheese after two minutes, then add time in one-minute increments. Let cool on a rack to crisp up a little for five minutes before serving.


2. Chilaquiles

That’s right. We’re heading south of the border for a scrumptious breakfast inspired by the Mexican dish Chilaquiles. The ingredients are simple and the cooking will be even simpler because we’re putting it all in a microwave.


  • 2 eggs
  • 2 tablespoons milk
  • 1/4 cup black beans
  • Pinch of salt
  • Pinch of ground black pepper
  • 3 tablespoons shredded Mexican cheese blend
  • Handful of tortilla chips, crushed
  • 3 tablespoons salsa (or enchilada sauce)
  • Sour cream
  • Hot sauce


Place crushed tortilla chips in the bottom of the bowl. In another bowl, whisk together eggs, salt and pepper, salsa, beans, half the cheese and hot sauce. Pour egg mixture into mug over the crushed chips. Place bowl in microwave and cook for 2-3 minutes. Top with remaining cheese and a dollop of sour cream


3. Zoodles & Meatballs

Finally, we’re trading noodles for zoodles! With zucchini noodles and meatballs. That’s right, we’re cooking a staple, spaghetti and meatballs, but better!


  • 1 package of zoodles
  • Bag of frozen meatballs
  • Pasta sauce of choice 


Microwave frozen meatballs as instructed on the package. Add sauce and cheese to a plate of noodles and microwave for one minute. Top with meatballs and heat in 30-second increments to melt cheese further.
