1. Banana Chocolate Nice Cream
Here’s a treat like no other. The term “nice cream” refers to an ice cream-like concoction made with frozen bananas.
- 4 frozen sliced bananas
- 1/4 cup raw cacao powder
- 1/2 cup unsweetened coconut milk
- 1/2 teaspoon Kosher salt
Add bananas, cacao powder, coconut milk, and salt in a food processor. Process until smooth, and scrape sides of bowl occasionally. Spoon about 3/4 cup of soft serve into each bowl and serve immediately.
2. No-Bake Banana Bread Bites
- 1/2 cup almonds
- 1/2 cup walnuts
- 1 cup pumpkin seeds
- 1 cup old-fashioned rolled oats
- 1/2 cup banana chips
- 1 medium ripe banana
- 2 teaspoons cinnamon
- 1/2 teaspoon sea salt
Add all ingredients to a food processor. Process on high, until the nuts are ground up, and the ingredients are completely combined. Mixture should stick together.
Use a cookie scoop to portion the mixture out onto a cookie sheet. Roll into a ball and store in a container in the fridge for up to five days.
3. Peanut Butter, Banana & Bacon Sandwich
- 2 slices of bread
- 1/4 cup creamy peanut butter
- 1 banana, cut in half lengthwise and crosswise
- 2 slices of cooked bacon
Spread peanut butter on bread, top with banana and bacon. Using the remaining bacon fat, pan-fry the sandwich on each side for four minutes like you would a grilled cheese sandwich. Cut in half and serve immediately.
