3 Easy Banana Recipes to Satisfy Your Sweet Tooth

Get this – only one kind of banana is commercially grown, and they could be going extinct. While they’re still here, we’re bringing you fun and funky ways to go bananas for bananas! Chef Teresa Hansen is sharing some refreshing, delicious recipes for this summer we know you’ll love.

1. Banana Chocolate Nice Cream

Here’s a treat like no other. The term “nice cream” refers to an ice cream-like concoction made with frozen bananas.

Ingredients:

  • 4 frozen sliced bananas
  • 1/4 cup raw cacao powder
  • 1/2 cup unsweetened coconut milk
  • 1/2 teaspoon Kosher salt

Directions:

Add bananas, cacao powder, coconut milk, and salt in a food processor. Process until smooth, and scrape sides of bowl occasionally. Spoon about 3/4 cup of soft serve into each bowl and serve immediately.

 

2. No-Bake Banana Bread Bites

Ingredients:

  • 1/2 cup almonds
  • 1/2 cup walnuts
  • 1 cup pumpkin seeds
  • 1 cup old-fashioned rolled oats
  • 1/2 cup banana chips
  • 1 medium ripe banana
  • 2 teaspoons cinnamon
  • 1/2 teaspoon sea salt

Directions:

Add all ingredients to a food processor. Process on high, until the nuts are ground up, and the ingredients are completely combined. Mixture should stick together.

Use a cookie scoop to portion the mixture out onto a cookie sheet. Roll into a ball and store in a container in the fridge for up to five days.

 

3. Peanut Butter, Banana & Bacon Sandwich

Ingredients: 

  • 2 slices of bread
  • 1/4 cup creamy peanut butter
  • 1 banana, cut in half lengthwise and crosswise
  • 2 slices of cooked bacon

Directions:

Spread peanut butter on bread, top with banana and bacon. Using the remaining bacon fat, pan-fry the sandwich on each side for four minutes like you would a grilled cheese sandwich. Cut in half and serve immediately.
