Watermelon Recipes for National Watermelon Month

Summer days are much sweeter with a ripe, cold watermelon. We met up with Chef, Stacey Weber who shows us how to utilize this naturally flavorful fruit to make three different refreshing summer dishes.  

 

  • GRILLED WATERMELON STICKS AND DIP 

-Cut watermelon into stick 

-Add habanero or tajin seasoning to sticks (can leave off if no spice is wanted) 

-Add sticks to grill 

-Flip sticks after a couple minutes (you’re looking for grill marks on each side)

-Take off of grill 

 

  • DIP RECIPE 

-Put plain yogurt in a bowl 

-Add lime, lime zest and honey 

-Mix together 

 

  • WATERMELON POKE BOWL 

-Slice watermelon into cubes and set aside 

-Add either rice or mixed greens to your bowl for the base 

-Add sliced cucumber, watermelon, pickled ginger, toasted pepitas, cashews or peanuts, avocado, sesame seeds, green onion, and cilantro 

-Then add your sauce- we used a tamari based sauce with chili flakes, sesame oil, agave, sesame seeds and ginger 

 

  • WATERMELON MARGARITA 

-Add frozen strawberries and watermelon to your blender  

-Then add mint leaves and tequila 

-Blend 

-Garnish with a strawberry, watermelon piece and mint leaf
